Best Pressure Canners: How to Choose One for Home Canning

Quick answerIf you want one canner that does everything, get a stovetop model that holds 7 quart jars. The Presto 01781 is the straightforward pick with a dial gauge. The All American 921 skips the rubber gasket entirely with a metal-to-metal seal. If you'd rather push a button, Presto's digital canners automate the process, but follow Presto's manual, not USDA times, with those.

A pressure canner is the one piece of canning gear you can't improvise. Green beans, corn, potatoes, meat, stock: anything low in acid has to be processed at 240 to 250°F to deal with botulism spores, and boiling water tops out at 212°F at sea level. The only way to get there at home is steam under pressure, per the National Center for Home Food Preservation (NCHFP).

So the question isn't whether you need one if you want to can vegetables. It's which one fits your kitchen, your batch size and how much fiddling you're willing to do.

What actually matters

  • Capacity. NCHFP's processes were developed for canners that hold at least 4 quart jars upright with the lid on. Anything smaller is a pressure cooker, not a canner, and USDA has no tested times for it. Most of the stovetop canners below hold 7 quarts.
  • Dial gauge or weighted gauge. A dial gauge lets you use the finer pressure steps in USDA's altitude tables, but NCHFP says to have it checked for accuracy every year (many county Extension offices do this). A weighted gauge rocks or jiggles and never needs checking, but above 1,000 feet it runs at the next step up: 15 pounds instead of 10.
  • Gasket or no gasket. Most modern canners seal with a gasket, which NCHFP says should be kept clean and checked for nicks or drying. All American's canners use a metal-to-metal seal with clamping locks instead, per the listing.
  • Your cooktop. Check the listing. Presto says the 01781 works on regular and smooth-top ranges. T-fal lists gas and electric coil cooktops.
Not a cannerElectric multicookers like the Instant Pot don't count, even with a “canning” button. NCHFP doesn't support using USDA canning processes in them: there's been no thermal process research, and their shorter heat-up and cool-down can leave food under-processed.

All American's canners are built around one idea: no gasket to wear out. Clamping locks squeeze a metal-to-metal seal, and each model has both a steam gauge and a regulator weight, per the listing. Presto digital canners: push-button, with a caveat

Presto's digital canners automate pressure canning and water bath canning on the countertop, and Presto says they need no adjustment for altitude, and the listing says a sensor holds the processing temperature. That's genuinely convenient. The caveat: in a 2021 statement relayed by Kansas State Extension, NCHFP said the University of Georgia hadn't independently verified Presto's marketing claims, that Presto did its own research, and that you should follow Presto's manual and recipes with these units rather than USDA/NCHFP directions.

Using any stovetop canner safely

The canner is only half of it. These steps come straight from NCHFP and apply to every brand:

  1. Vent first. Once steam pours out of the open vent, let it go for a full 10 minutes before you close the petcock or put the weight on. Trapped air means the temperature inside is lower than the gauge suggests.
  2. Time from pressure. Start the clock when the dial reads the target pressure or the weight starts to jiggle. If pressure drops below target, bring it back up and start the time over.
  3. Let it come down on its own. No cold water, no opening the vent early. NCHFP warns forced cooling can lead to unsafe food and seal failures.
  4. Wait 10 more minutes. After it's depressurized, remove the weight or open the petcock, wait 10 minutes, then lift the lid away from your face.
  5. Use tested times for your altitude. Every USDA recipe lists times and pressures by elevation.

FAQ

Can I use an Instant Pot as a pressure canner?

No. NCHFP doesn't support using USDA canning processes in electric multicookers, even with a canning button. The tested processes were developed for stovetop canners that hold at least 4 quart jars.

Do I need a pressure canner for green beans?

Yes. They're low-acid, and NCHFP says flatly that there's no safe boiling-water option for green beans. See our green bean guide.

How often should a dial gauge be checked?

Every year before canning season, per NCHFP. If it reads more than 2 pounds off, replace it.
