CanningLab helps home cooks choose and use food preservation gear: pressure canners, water bath canners, jars and lids, dehydrators, vacuum sealers and fermenting crocks.
Where our information comes from
- Safety and process information (methods, processing times, pressures, storage) mainly comes from the USDA Complete Guide to Home Canning, the National Center for Home Food Preservation (NCHFP) at the University of Georgia, and USDA's Food Safety and Inspection Service, plus Cooperative Extension services and manufacturers' current instructions where noted. We cite the source on every page.
- Product details come from maker specifications and retail listings, and we say so (“per the listing”).
What we don't do
We don't test products in a lab or kitchen, and we don't invent ratings, scores or test results. We don't create our own canning recipes or processing times. If something isn't covered by a tested source, we say that instead of guessing.
