Sources come first

Every canning method, processing time, pressure, headspace and storage guideline on CanningLab comes from a tested, published source, mainly the USDA Complete Guide to Home Canning, the National Center for Home Food Preservation, and USDA's Food Safety and Inspection Service. Each page lists its sources.

Product information

Product specs come from the maker or the retail listing and are attributed (“per the listing”). We don't lab-test or kitchen-test products, and we don't publish invented scores, star ratings or prices. Recommendations are judgments based on those published specs.

When sources disagree or are silent

If authoritative sources disagree (for example, older and newer lid instructions), we say so and point you to the maker's current directions. If we can't find authoritative guidance on something, we say that rather than filling the gap.
